DIY Peanut Sesame Noodles

 

Ingredients

  • 6 oz of your favourite noodles (I used Lotus Foods Millet and Brown Rice Ramen Noodles!)

  • 1 1/2 tbsp peanut butter

  • 1 tbsp soy sauce

  • 1-2 tbsp of honey or maple syrup

  • 1 garlic clove, minced

  • 1/2 tsp fresh ginger, grated

  • Protein of choice (ex: air/pan fried salmon, tofu, boiled eggs, etc.)

  • Fresh or sauteed veggies (ex: cucumber, carrots, spinach, bok choy, broccoli, etc.)

Instructions

  1. Prepare your choice of protein.

  2. Cook and drain the noodles according to the directions on the package.

  3. In a small bowl, combine the peanut butter, soy sauce, sweetener of choice and minced garlic & ginger.

  4. Stir the sauce into the noodles.

  5. Add toppings of choice and serve. Enjoy!
