DIY Cottage Cheese Muffins
For a nutritious & savoury start to the day!
Ingredients
5 eggs
1 cup cottage cheese
1 tablespoon honey
1 tablespoon olive oil
¼ cup milk of choice
1.5 cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
3 cups of chopped veggies of your choice (ex: bell pepper, spinach, green onions, mushroom, broccoli, etc.)
1 cup cheese, shredded
Instructions
Preheat oven to 400°F.
In a large bowl, whisk eggs, milk, cottage cheese, olive oil, and honey.
Add flour, baking powder, and salt; mix well.
Stir in veggies, green onions, and most of the cheese.
Divide into 12 muffin cups, top with remaining cheese, and bake for 23–27 minutes.
