DIY Cottage Cheese Muffins

 

For a nutritious & savoury start to the day!

Ingredients

  • 5 eggs

  • 1 cup cottage cheese

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • ¼ cup milk of choice

  • 1.5 cups all purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 3 cups of chopped veggies of your choice (ex: bell pepper, spinach, green onions, mushroom, broccoli, etc.)

  • 1 cup cheese, shredded

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, whisk eggs, milk, cottage cheese, olive oil, and honey.

  3. Add flour, baking powder, and salt; mix well.

  4. Stir in veggies, green onions, and most of the cheese.

  5. Divide into 12 muffin cups, top with remaining cheese, and bake for 23–27 minutes.
