DIY Oatmeal Cookies

 

Whip up a batch of these versatile oatmeal cookies using both pantry staples and leftover ingredients! These treats are customizable to better suit your household’s taste buds and are ideal for both breakfast & snacking!

Yield: 10-12 cookies

Ingredients:

  • 1 egg

  • ¼ cup mashed banana or applesauce

  • ¼ cup nut/seed butter

  • ¼ cup maple syrup or honey

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • ⅙ tsp salt

  • 1 ½ cup rolled oats

  • ½ cup all purpose flour or oat flour (or ground oats)

  • 1 tsp baking powder

  • (Optional) Nuts/seeds of choice, raisins or chocolate chips

Directions

  1. Preheat oven to 360°F and line a baking sheet with parchment paper.

  2. In a large mixing bowl add the egg, mashed banana or applesauce, nut/seed butter, maple syrup, ground cinnamon, vanilla extract and salt. Stir the wet mixture until it is well combined.

  3. Add to the wet mixture rolled oats, flour and baking powder. Using a spatula, stir ingredients together without overmixing.

  4. Mix in additional ingredients such as chocolate chips, chia seeds, raisins or walnuts.

  5. Let the dough rest in the fridge for at least 10 minutes.

  6. Scoop about 1/4 - 1/3 cup of dough out and shape 10 cookies. Transfer the cookies to the parchment paper covered baking sheet, spacing them apart.

  7. Bake in hot oven for 10 to 12 minutes. Let it cool before serving with your choice of milk or yogurt.
