Apple Chicken Salad Sandwich

 

An early & refreshing dive into the fall flavours!

Ingredients

  • 1/3 cup of mayonnaise

  • 1 tsp mustard (yellow or Dijon)

  • 1 tsp apple cider vinegar

  • 2 cooked skinless chicken breasts (see cooking instructions here)

  • 1/2 apple, diced

  • 1/4 cup almonds or walnuts, toasted

  • 1/4 cup dried raisins

  • 2 tbsp of chopped kale or parsley

  • salt and pepper, to taste

Instructions

  1. In a medium-sized bowl, shred the cooked chicken.

  2. Mix in the mayonnaise, mustard an apple cider vinegar, and toss well.

  3. Add in the chopped apples, toasted almonds, raisins and parsley. Combine well.

  4. Season with salt & pepper to taste

  5. Enjoy!
